Lime Vinaigrette

Dance the tangy fantastic with this lime vinaigrette recipe - it's simple to make and ideal for topping off a fresh, green summer salad.

Lime Vinaigrette

What you need:

grated rind and juice of 2 limes
1 Tbsp wine vinegar
2-3 Tbsp chopped parsley
¼ tsp each of ground cumin & cardamom

1 clove garlic, crushed
5-6 Tbsp olive oil
sea salt

What to do:

Combine all ingredients. Yup, that's it. Store in an airtight bottle in the fridge and shake well before you use it.

Get moving on the dancefloor with this tasty tomato salsa - it's perfect for eating at home or serving as a dip at a party.

Tomato Salsa

What you need:

1 medium onion
2 cloves garlic, crushed
425g whole peeled tomatoes
1 tsp cumin

½ tsp marjoram
1 tsp chilli powder
black pepper
1 tsp chilli sauce

What to do:

Blend onions and garlic. Add drained tomatoes and process until combined but still chunky. Add seasonings and heat mix to boiling, then simmer for five minutes.

All done! Serve with corn chips, or as a topping on corn fritters or Mexican dishes.

Soy Sauce Dressing

Try this Asian-inspired dressing using soy sauce as a base - it compliments most types of salad.

Soy Sauce


Soy Sauce Dressing (makes 1 ¼ cups)

What you need:

¾ cup oil
3 Tbsp soy sauce
2 Tbsp lemon juice
1 clove garlic, crushed
grated fresh ginger
salt & pepper

What to do:

Combine all ingredients and refrigerate in an airtight jar for up to three weeks.
