Homemade Veggie Burger Recipe For the Budget Cook

Pre-packaged veggie burgers can be a burden on your wallet. In my area, they cost more than $4.00 for a box of 4 burgers. If you are on a tight food budget, or just like to get the most for your money, you'll love this recipe.
I found it in the back of an old magazine while cleaning out my dad's storage room one day. I decided to try it out and I was amazed. Even my meat-eating father (who normally scorns vegetarian food) thought they were delicious.

MEXICAN BEAN BURGERS
YIELDS: 12 Burgers
Ingredients:
- 1 carrot, sliced
- 1 (15 ounce) can kidney beans
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 2 cups salsa
- 1 cup dried bread crumbs
- 1/2 cup all purpose flour
- 1/2 teaspoon pepper
- salt to taste
- pinch of chili powder
Directions:
1.) Place carrot into a bowl, and fill with about 1/4 inch of water. Cover with plastic wrap, and cook in the microwave for 2 minutes, or until soft. Drain.
2.) Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Form mixture into 8 patties, and place on a greased baking sheet.
3.) Heat a large skillet over medium-high heat, and coat with cooking spray. Fry the patties for about 8 minutes on each side, or until browned and firm.
TIPS:
These veggie burgers are fantastic on the grill! They can also be cooked in the oven if you prefer. Use plenty of flour on your hands to keep them from sticking while you're forming the patties. Also, try melting cheese on them while they're still on the grill or in the pan.
Stocking the dry ingredients used in this recipe is a wise choice. You'll be able to make your own veggie burgers time and again, buying only a carrot and can of beans!
SERVING SUGGESTION:
Serve on wheat rolls (or regular hamburger buns) with lettuce, tomato, cheese and your favorite condiment. These veggie burgers go great with oven-fries.
